Preheat oven to 400 degrees F. Line a muffin pan with muffin liners. In a large bowl, mix 2 cups of flour, 1/2 cup of sugar, 3 tablespoons of baking powder, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of salt.
Next, add 1/3 cup of vegetable oil, 1 egg, 1 1 /4 cups of milk, and 1 teaspoon vanilla extract. Mix until combined.


Gently fold in 2 1/4 cups of chopped apples
Fill the muffin liners 2/3 full of the apple cinnamon muffin batter.
Make the topping. In a small bowl, add 3 tablespoons of sugar, 2 tablespoons of brown sugar, and 1/2 teaspoon of ground cinnamon, mixing with a fork until combined.
Sprinkle a generous amount of the sugar mixture on to the tops of the muffins. Bake for 20-25 minutes rotating the pan halfway through the baking process so that everything bakes evenly.
